3 -4 Chicken breasts or 4 -6 chicken thighs
1 can coconut Milk
1/4 tsp curry
1/4 cumin
1/4 – 1/2 tsp Chinese 5 Seasoning
2 small heads of broccoli or 16 oz bag frozen brocolli
Cocnut Oil
1/4 tsp ginger minced
3 garlic cloves minced
2 basil leaves
1/2 yellow onion, chopped
In a dutch oven, brown chicken in 1 -2 Tbls coconut oil, 10 minutes on each side. Add coconut milk, chopped onion, minced ginger, minced garlic and broccoli. Bring to a boil. Reduce heat, add basil and other seasonings. Cover, simmer 20 minutes.
