I love summer salads, especially this one. This salad is very refreshing, very filling and incredibly easy to make. The best part? Everyone loves it!
It’s great as a side dish for barbeques or as a lunch salad. Any way you serve it, I hope you enjoy it.
Basic Diet Approved, Advanced Diet Approved, Vegetarian, Vegan
Servings: 4 side dish sized servings
Prep Time: 8 – 10 minutes
For the Salad:
- 2, 8 oz cans Organic Black beans, rinsed and drained or 1, 16 oz bag of dried black beans already prepared according to the directions on the package
- 1 organic red pepper, diced
- 1 organic avocado, cubed
- 2 Tbls diced red onion, optional
Add all ingredients to medium sized bowl
- 1/4 cup cilantro minced or 1 Tbsp dried cilantro
- Juice and zest of 1 lime
- 1 Tbsp balsamic vinegar
- 1/4 tsp ground cumin
- 3 Tbsp olive oil
- Salt and pepper to taste
In a small bowl, whisk all ingredients until combined. Add to black bean mixture and refrigerate before serving.
